I'm always seeking healthy desserts for my kids, husband and me! This is one of them. And avocados of course are the ultimate skin food- high in healthy fat, antioxidants and sun protector.
When playing with the creation of this dessert, the lime rind was a game changer. Don't skip that ingredient! And I was happy with 4 T of the Maple Syrup, but the rest of the gang asked for just a little more sweetness, then it was a hit! Enjoy!
Avocado Lime Ice Cream
2 Cups of chopped Avocado
1/2 cup of Coconut Cream (Thai Kitchen Full Fat Coconut Milk) only use the separated coconut cream in the can
4-5 T of Maple Syrup
6 T of Lime Juice
Rind of 2 Limes
1/2 tsp of Madagascar Vanilla Extract (non-alcoholic) or regular vanilla extract
Put all ingredients in the food processor and blend until smooth. Freeze. Scoop and serve.
Serves four. Double up the recipe if you would like larger servings.
