Ayurvedic Tips for healthy digestion:
1. Eat foods that are easy to digest. Cooked foods with plenty of spices is an excellent choice for cold winter months. Save raw foods for the hot summers days.

3. Eat foods in their whole state.
4. Give plenty of time for your last meal to digest before having your next. This avoids overworking the digestive system and building up unwanted toxins.
5. Eat in slow-beauty mode.
Kitchari with Basmati Rice topped with Lime Ginger Tonic
Who knew detoxing could taste this good! Kitchari is a delicious- easy to digest - detox dish and great for all elemental natures.
Ingredients:
1 cup yellow mung beans (available at your local Indian Grocery Store)
6 cups of water
2 T coconut oil
1 large parsnip sliced
1 cup of chopped parsley
Juice of 1 lime.
1 tsp mustard seed
1 tsp of cumin seed
pinch of cinnamon
pinch of hing ( omit if you do not have this)
1 tsp of Himalayan Sea Salt
1 tsp of turmeric
10 cardamom pods
Method:
Rinse mung beans and soak overnight.
Rinse again the following day and let water drain as much as possible. Heat the coconut oil in a large pot and the cumin seed, mustard seed, cinnamon, cardamom pods and hing. When the mustard seeds start to pop add the yellow mung beans. Toast these in the spices and oil for about 2 minutes. Add the water, turmeric and salt. Bring to a boil then simmer for 50 minutes, add parsnip cook an additional 30 minutes, add parsley cook another 5 minutes. Add lime juice and stir.
Basmati Rice
1 cup of white Basmati
1 3/4 cups of water.
1 tsp of cumin seeds
5 cardomon pods
1 T of Coconut Oil
Method:
Heat the oil, add cumin seeds and cardamon pods. Cook for about 2-3 minutes, add rice and toast for another 3 minutes. Add water. Cover and simmer on low for 15 min. Let stand for 10 minutes.
Lime Ginger Tonic
6 T of minced fresh ginger root
Juice of 2 limes
Himalayan Salt
Serving:
Scoop rice in a bowl, layer with Kitchari and top with Lime Ginger Tonic. I love plenty of lime juice and a little addition of Himalayan Sea Salt to taste.
