My kitchen is full with cookbooks because I love to cook! And I love to cook gourmet -healthy! At the moment I am fascinated with creating plant based dishes that taste amazing. I stumbled across this Pumpkin Pie Smoothie recipe from the book HOT Detox by Julie Daniluk, R.H.N. It was so good I had to share!
This book offers vegan and non vegan recipes. I LOVE that this book supports fuelling your digestive fire with the right foods, spices and the right temperature! The author offers insights from Ayurvedic and Chinese practices that inspire us to keep our digestion strong with anti-inflammatory solutions that spark digestive vitality!
Pumpkin Pie Smoothie
1 1/2 cups unsweetened almond milk (store bought or homemade recipe here)
1/2 cup of pumpkin puree
1/2 cup coconut milk
1/4 cup of Hemp Hearts
2 medjool dates, pitted
1 tsp pure vanilla extract
1/4 tsp of grond ginger
pinch ground all spice
pinch of ground nutmeg
pinch of ground cloves
You can have this smoothie warm!
1. In a small sauce pan over low heat, combine the almond milk and pumpkin puree. Heat gently and stir occasionally until the mixture is very warm.
2. Meanwhile place the rest of the ingredients in a blender. Add the warm pumpkin mixture and blend on high speed until smooth.
If you want to get real fancy topped it with some coconut whip cream and a sprinkle of cinnamon!
